Ingredients

1 head of cauliflower, cut into florets

2 cups white vinegar

1/2 cup sugar

2 tablespoons kosher salt

2 tablespoons mustard seeds

1 teaspoon black peppercorns

4 cloves garlic, peeled and smashed

2 bay leaves

Zest of 1 lemon

Juice of 1 lemon

Directions

In a medium saucepan, combine the lemon juice, zest, bay leaves, garlic, peppercorns, mustard seeds, salt and sugar. Pour in the white vinegar and bring to a boil over medium-high heat. Reduce heat to low and simmer for 10 minutes. Place the cauliflower florets in a large bowl or jar and pour the hot pickling liquid over them. Let cool to room temperature before transferring to an airtight container and refrigerating for at least 24 hours before serving.
