Ingredients
4 salmon fillets
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 avocados, diced
1/4 cup diced red onion
1/4 cup chopped fresh cilantro leaves
2 tablespoons freshly squeezed lime juice
2 tablespoons extra virgin olive oil
Directions
, 1/2 head romaine lettuce, chopped Preheat oven to 400 degrees F. In a small bowl, whisk together the extra virgin olive oil, lime juice, cilantro and red onion. Set aside. Place the diced avocados in a medium bowl and season with salt and pepper to taste. Gently toss to combine. Heat the olive oil in an oven-safe skillet over medium-high heat until shimmering. Add the salmon fillets and cook for 2 minutes per side or until golden brown on both sides. Transfer the skillet to the preheated oven and bake for 8 minutes or until cooked through. Remove from oven and set aside to cool slightly before flaking into large pieces with a fork. To assemble the salad, place the chopped romaine lettuce in a large bowl and top with the avocado mixture, flaked salmon pieces and reserved dressing mixture; gently toss to combine.
