Rapid Rolls from 'Kitchen Confidence'
When I was in high school, my friends and I used to gorge ourselves on frozen Sister Schubert's Parker House yeast rolls.

Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 3/4 cup milk
- 2 tablespoons butter, melted and cooled slightly
- Vegetable oil, for frying
Directions
- Heat the vegetable oil in a large skillet over medium-high heat.
- In a medium bowl, whisk together the butter, milk, sugar, salt, and baking powder until combined.
- Add the flour and stir until just combined. The batter should be thick but still pourable.
- Drop heaping tablespoons of batter into the hot oil and fry for 1 to 2 minutes per side, or until golden brown and cooked through.
- Transfer to a paper towel-lined plate to drain any excess oil and serve warm with your favorite toppings or sauces!
