Ingredients

4 tablespoons butter, plus more for greasing the dish

1/4 cup all-purpose flour

2 cups milk

1/2 teaspoon salt

Pinch of freshly grated nutmeg

6 large egg yolks, lightly beaten

3 ounces Gruyere cheese, grated

6 large egg whites

2 tablespoons freshly grated Parmesan cheese

Directions

Preheat the oven to 375 degrees F. Grease a 2-quart soufflé dish with butter and sprinkle with Parmesan cheese. In a medium bowl, whisk together the egg whites until stiff peaks form. Set aside. In a large saucepan, melt the butter over medium heat. Add the flour and whisk until combined and bubbly, about 1 minute. Slowly add the milk, whisking constantly until thickened, about 5 minutes. Remove from heat and stir in the Gruyere cheese, egg yolks, nutmeg, and salt until combined. Gently fold in the egg whites into the cheese mixture until just combined . Pour into prepared dish and bake for 30 minutes or until golden brown and puffed up. Serve immediately. Enjoy!.
