Ingredients
1 large eggplant
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
3 tablespoons chopped fresh parsley
2 cloves garlic, minced
Salt and freshly ground black pepper, to taste
1/4 cup olive oil, divided
Directions
Preheat oven to 375 degrees F . Grease a baking sheet with 2 tablespoons olive oil. In a small bowl, mix together garlic, parsley, Parmesan cheese, mozzarella cheese, and ricotta cheese. Set aside. Place eggplant slices on the prepared baking sheet. Brush each slice with remaining olive oil and season with salt and pepper to taste. Bake in preheated oven for 10 minutes. Remove from oven and spread cheese mixture evenly over each slice of eggplant. Roll up each slice and place seam side down on the baking sheet. Brush tops of rolls with remaining olive oil and sprinkle with additional Parmesan cheese if desired. Bake in preheated oven for an additional 15 minutes or until golden brown and bubbly. Serve warm or at room temperature. Enjoy!.
