Ingredients
2 medium zucchini, spiralized into noodles
1 pint cherry tomatoes, halved
8 ounces fresh mozzarella cheese, cubed
1/4 cup fresh basil leaves, chopped
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
Directions
In a large bowl, combine the zucchini noodles, cherry tomatoes, mozzarella cheese, and basil leaves. In a small bowl, whisk together the balsamic vinegar and olive oil until combined. Pour the dressing over the salad and toss to combine. Season with salt and pepper to taste. Serve immediately or chill in the refrigerator for up to 2 hours before serving. Enjoy!.
