Ingredients

1 head of cauliflower

1/4 cup of olive oil

1 teaspoon of garlic powder

1 teaspoon of Italian seasoning

Salt and pepper to taste

1/2 cup of shredded mozzarella cheese

1/4 cup of grated Parmesan cheese

3 tablespoons of tomato paste

2 tablespoons of chopped fresh basil leaves

Directions

, 1/4 cup of almond flour Preheat oven to 375 degrees F . Cut the cauliflower into florets and place in a food processor. Pulse until the cauliflower is finely chopped and resembles rice. Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes, stirring halfway through. Allow to cool slightly before transferring to a large bowl. Add the tomato paste, Parmesan cheese, mozzarella cheese, basil leaves, Italian seasoning, garlic powder, salt and pepper to the bowl with the cauliflower and mix until combined. Grease an 8-inch round baking dish with olive oil and spread the cauliflower mixture evenly in the dish. Sprinkle almond flour over top of the mixture and press down lightly with your hands or a spoon to form a crust. Drizzle remaining olive oil over top of crust. Bake for 25 minutes or until golden brown on top and cooked through in center when tested with a knife or toothpick. Allow to cool for 10 minutes before slicing into wedges and serving warm. Enjoy!.
