Ingredients

1/2 cup oat bran

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

3 tablespoons melted butter or coconut oil

2 tablespoons honey or maple syrup

2 large eggs, lightly beaten

1/2 cup plain Greek yogurt or sour cream

1 teaspoon vanilla extract

3/4 cup unsweetened applesauce

1/2 cup chopped walnuts

Directions

Preheat oven to 375°F and line a 12-cup muffin tin with paper liners. In a medium bowl, combine walnuts , applesauce, vanilla extract, yogurt or sour cream, eggs, honey or maple syrup and melted butter or coconut oil. Stir until well combined. In a separate bowl, whisk together salt, baking soda, baking powder, oat bran, whole wheat flour, all-purpose flour, cinnamon and nutmeg. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix! Divide the batter evenly among the prepared muffin cups and bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!.
