Ingredients
2 cups cooked brown rice
1 lb. turkey Italian sausage, casings removed
1 green bell pepper, diced
1 onion, diced
2 cloves garlic, minced
1 can diced tomatoes with juice
1/2 teaspoon dried oregano
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
1/2 cup shredded mozzarella cheese
Directions
Preheat oven to 350°F. Grease a 9x13-inch baking dish with cooking spray. Heat olive oil in a large skillet over medium heat. Add onion, garlic, and bell pepper; cook until vegetables are softened, about 5 minutes. Add turkey Italian sausage and cook until browned, about 8 minutes. Drain off any excess fat from the pan. In a large bowl, combine cooked sausage mixture with diced tomatoes and juice, oregano, salt and pepper to taste. Stir in cooked brown rice until combined. Pour into prepared baking dish and top with mozzarella cheese. Bake for 25 minutes or until cheese is melted and bubbly around the edges of the casserole dish. Serve warm and enjoy!.
