Ingredients

1 tablespoon olive oil

2 cloves garlic, minced

1/2 cup diced onion

8 ounces mushrooms, sliced

1 bunch asparagus, trimmed and cut into 1 inch pieces

6 large eggs

1/2 cup milk

Salt and pepper to taste

4 ounces goat cheese, crumbled

2 tablespoons chopped fresh parsley

Directions

Preheat oven to 350 degrees F . Grease a 9x13 inch baking dish. Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook and stir until onion is softened, about 5 minutes. Add mushrooms and asparagus; cook and stir until vegetables are tender, about 8 minutes more. Season with salt and pepper to taste. In a large bowl, whisk together eggs, milk, parsley, and goat cheese until combined. Pour egg mixture into the prepared baking dish. Top with cooked vegetables. Bake in preheated oven for 25 to 30 minutes, or until center is set and top is golden brown. Let cool for 10 minutes before serving. Enjoy!.
