Ingredients

4 large tomatoes, cut into wedges

2 cloves garlic, minced

1 jalapeno pepper, seeded and finely chopped

2 tablespoons olive oil

1/4 cup fresh cilantro leaves, chopped

Juice of 1 lime

Salt and freshly ground black pepper to taste

Directions

Preheat oven to 400 degrees F . In a medium bowl, combine lime juice, cilantro, olive oil, jalapeno pepper, garlic and tomatoes. Toss to coat evenly. Place tomato mixture on a baking sheet and season with salt and pepper to taste. Roast in preheated oven for 20 minutes or until tomatoes are lightly browned and softened. Remove from oven and let cool slightly before serving as a salsa or topping for tacos or burritos. Enjoy!.
