Ingredients
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 large onion, finely chopped
3 cloves garlic, minced
1 tablespoon freshly grated ginger
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon garam masala
1/4 teaspoon turmeric powder
1/4 teaspoon cayenne pepper
2 cups cooked chickpeas
3 tomatoes, diced
Salt to taste
Freshly chopped cilantro for garnish
Directions
Heat the oil in a large skillet over medium heat. Add the cumin seeds and cook for 1 minute, stirring constantly. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute, stirring constantly. Add the tomatoes, turmeric powder, garam masala, ground cumin, ground coriander, and cayenne pepper . Stir to combine and cook for 5 minutes or until the tomatoes are softened. Add the cooked chickpeas and stir to combine with the spices. Cook for another 5 minutes or until heated through. Taste and adjust seasoning with salt as needed. Garnish with freshly chopped cilantro before serving with rice or naan bread if desired!.
