Ingredients
1/2 cup fresh navel orange juice
2 tsp fresh orange zest
2 Tbsp fresh lemon juice
1 tsp lemon zest
2 Tbsp fresh lime juice
1/2 tsp lime zest
1/4 cup olive oil
3 Tbsp chopped shallot or red onion
1 Tbsp minced fresh garlic
1 Tbsp chopped fresh rosemary
2 tsp dijon mustard
2 tsp honey
1 1/2 tsp salt
1/2 tsp freshly ground black pepper.
4 - 5 boneless skinless chicken breasts or thighs
Directions
In a mixing bowl whisk together all ingredients except chicken until well combined. Place chicken in a gallon size resealable bag or dish. Pour marinade over chicken. Transfer to refrigerator and let rest at least 1 hour and up to 6 hours. Preheat a grill over medium-high heat. Remove chicken from marinade and cook on grill until center registers 165 degrees in center of thickest portion, turning once halfway through cooking . Let chicken rest 5 minutes before serving. Garnish with chopped fresh parsley if desired.
