Kaffir Lime and Gin Ice Cream
A silky custard ice cream with kaffir lime, ginger, gin, and rosewater, made for a bright, botanical scoop after a rich meal.

Ingredients
- 3 cups half and half
- 20 kaffir lime leaves, bruised slightly
- 2 inches ginger, thinly sliced
- 6 egg yolks
- 3/4 cup sugar
- 5 tablespoons gin
- 1 teaspoon rosewater
- 1/2 teaspoon kosher salt
Directions
- Set a medium saucepan over medium-high heat and add the half and half, lime leaves, and ginger. Once the mixture comes to a boil, turn it down to a simmer and let it cook for 20 minutes, stirring here and there. Pour it through a strainer to remove the lime leaves and ginger slices.
- In a medium bowl, whisk the egg yolks with the sugar until the mixture looks pale and a little thicker. Slowly add 1/2 cup of the warm half and half to the bowl while whisking the whole time, then pour the yolk mixture back into the saucepan. Keep it over low heat, stirring often, until the custard coats a spoon and you can drag a finger through it without the line filling back in.
- Strain the base into an airtight container, then mix in the gin and rosewater. Season with salt to taste, then refrigerate it overnight. The next day, churn it according to your ice cream maker’s directions.
