Ingredients

4 heads garlic, peeled

1 teaspoon salt

1 teaspoon freshly ground pepper

1 cup freshly squeezed sour orange juice *

1/2 cup freshly squeezed lime juice

1 onion, roughly chopped

2 teaspoons dried oregano

1 cup olive oil

2 red bell peppers, seeds removed and roughly chopped

4 cloves garlic

1 bunch cilantro

1/2 teaspoon cayenne pepper

1 tablespoon cumin

1 tablespoon paprika

1 dried red chile, seeds removed

Directions

In the bowl of food processor, add garlic, salt, pepper, orange juice, lime juice, onion and oregano. Process until it is a smooth paste, about 2 to 3 minutes. Through the feeder tube of the food processor, slowly add the olive oil until the mixture is fully emulsified. Store in the refrigerator until ready for use.
