Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 teaspoon ground cumin
1 teaspoon smoked paprika
4 cups vegetable broth or water
1 cup dried green lentils, rinsed and drained
Juice of one lemon
Zest of one lemon
Salt and pepper to taste
Chopped fresh parsley for garnish
Directions
Combine lemon zest, parsley, garlic, and half of olive oil in a medium bowl and stir with a fork until homogenous. Season to taste with salt and pepper and set aside.
