3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

3 eggs, lightly beaten

1 cup vegetable oil

2 cups white sugar

2 teaspoons vanilla extract

2 cups grated zucchini

1 can crushed pineapple, drained

Directions

Adjust oven rack to middle position and preheat to 350 degrees F. Butter an 8- by 4-inch loaf pan and set aside.
