1 cup all-purpose flour

1 cup yellow cornmeal

2 teaspoons baking powder

1 large egg, lightly beaten

1 cup buttermilk

3 tablespoons melted butter or vegetable oil

Directions

Place a well-seasoned 12-inch cast iron skillet on the center rack of the oven and preheat oven to 375 degrees F.
