Ingredients
2 pounds small potatoes, such as Yukon Gold or red potatoes, cut into 1-inch cubes
3 tablespoons extra-virgin olive oil
2 teaspoons finely grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 cloves garlic, minced
2 tablespoons chopped fresh parsley leaves
Directions
Preheat the oven to 425°F. In a small bowl, combine the parsley, garlic, pepper, salt, lemon juice, lemon zest, and olive oil. Mix until combined. Place the potatoes in a large bowl and pour the mixture over them. Toss to coat evenly. Spread the potatoes out on a baking sheet lined with parchment paper or aluminum foil and bake for 25-30 minutes or until golden brown and tender when pierced with a fork. Serve warm with additional freshly squeezed lemon juice if desired. Enjoy!.
