Bacon Cheeseburger Stuffed Zucchini Boats

Ingredients

4 medium zucchini

1 lb ground beef

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons Worcestershire sauce

2 cups shredded cheddar cheese, divided

8 slices bacon, cooked and crumbled

Directions

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside. In a large bowl, combine the cooked and crumbled bacon, 1 cup of cheddar cheese, Worcestershire sauce, salt, pepper, onion powder and garlic powder. Mix until combined. Add the ground beef to the bowl and mix until everything is evenly distributed. Set aside. Cut each zucchini in half lengthwise and scoop out the seeds using a spoon or melon baller. Place the zucchini halves on the prepared baking sheet cut side up. Divide the beef mixture among the zucchini halves, pressing it down into each one so that it’s evenly distributed and fills them up as much as possible without overflowing them . Sprinkle remaining cup of cheese over top of each zucchini boat. Bake for 25-30 minutes or until zucchini is tender and cheese is melted and bubbly on top. Serve warm!.
