This recipe is easy-peezy. It's so easy, in fact, that it almost feels like cheating to post it here.
See, I'm not above using store-bought ingredients in a pinch, and this is the kind of thing you can get home from work and whip up on a weeknight, or throw together from a few ingredients when you haven't had time to grocery shop. And there's a place for recipes like that in every kitchen, even mine.

Caramelized Onion Pizza Recipe
INGREDIENTS
2 tsp olive oil
2 shallots, peeled, thinly sliced
6 ounces store-bought pizza dough (or try my recipe here)
1/2 cup store-bought pizza sauce
1 cup grated mozzarella
Salt
Freshly ground pepper
DIRECTIONS
Preheat the oven to 450 degrees.
In a medium size saute pan, add the olive oil, salt, pepper and shallots over medium heat. Cook until the onions are well browned, about 8 to 10 minutes, stirring often, and then remove them from the heat.
On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the pizza sauce over the dough. Sprinkle with the mozzarella and caramelized onions. Bake until the pizza crust is nicely browned, about 12 to 14 minutes.
Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
