Ingredients

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 jalapeno pepper, seeded and diced

2 teaspoons ground cumin

1 teaspoon chili powder

4 cups chicken broth

2 cans black beans, drained and rinsed

1 can diced tomatoes with green chilies, undrained

3 cups cooked chicken, shredded or cubed

1/2 cup frozen corn kernels

Salt and freshly ground black pepper to taste

Tortilla chips for garnish

Directions

Heat the olive oil in a large pot over medium heat. Add the onion and jalapeno pepper and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more. Stir in the chili powder, cumin, salt, and pepper. Cook for 1 minute more. Add the chicken broth, diced tomatoes with green chilies, black beans, corn kernels, and cooked chicken to the pot. Bring to a boil then reduce heat to low and simmer for 15 minutes or until heated through. Serve with tortilla chips if desired. Enjoy!.
