Ingredients

2 cups gluten-free all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup vegan butter, melted and cooled slightly

¾ cup coconut sugar

2 tablespoons ground flaxseed meal + 6 tablespoons water

1 teaspoon vanilla extract

½ cup unsweetened almond milk or other non-dairy milk of choice

2 cups peeled and grated apples

Coconut oil for frying

For the topping:

1/2 cup powdered sugar or vegan powdered sugar alternative

1/4 teaspoon ground cinnamon

Directions

In large mixing bowl, combine brown rice flour, potato starch, tapioca starch, dark brown sugar, baking powder, ground cinnamon, salt, xanthan gum, and ground nutmeg. Whisk to combine.
