, Butter Preheat your sous vide water bath to 135°F . Season the halibut fillets with salt and pepper. Place the halibut fillets in a vacuum-sealed bag and seal it using the water displacement method. Place the bag in the preheated water bath and cook for 30 minutes. Remove the bag from the water bath and carefully open it, being careful not to let any of the hot liquid escape. Heat a large skillet over medium-high heat and add butter to it. Once the butter has melted, add the halibut fillets to the skillet and cook for 1 minute per side, basting with butter as you go. Serve immediately with your favorite sides!.
