Martha Stewart's Chicken and Kale Casserole Recipe

Ingredients

2 tablespoons olive oil

1 large onion, chopped

2 cloves garlic, minced

2 cups cooked chicken, diced

4 cups kale, chopped

1/2 teaspoon dried thyme

1/4 teaspoon freshly ground black pepper

1 can diced tomatoes, drained

1 cup low sodium chicken broth

1/2 cup grated Parmesan cheese

Directions

Preheat oven to 375 degrees F . Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Add kale and cook for an additional 5 minutes, stirring occasionally. In a large bowl, combine chicken broth, diced tomatoes, thyme, pepper, cooked chicken and kale mixture. Stir to combine. Transfer the mixture to a 9x13 inch baking dish and spread evenly. Sprinkle Parmesan cheese over the top of the casserole. Bake in preheated oven for 25 minutes or until cheese is melted and bubbly. Serve hot. Enjoy!.
